It should be really easy to say "Create a collection with all the pages in Category:Chemistry", for example.

This is already possible. There is one limitation though: articles in subcategories aren't added recursively. 



Start the book creator and go to http://en.wikipedia.org/wiki/Category:Chemistry . Then you can "Add this category to your book".
