On [[Special:OldReviewedPages]]/[[Special:UnreviewedPages]], there used to be an (under review) label next to edits when someone clicked on the (review) link in the last few minutes. This was useful for reviewers to avoid working on the same page an thus wasting time and effort. This seems to have disappeared recently.

They are still there. Clicking (review) does not automatically added the notice. You have to click the "advertise as reviewing" link thingy on the review form to show the notice on the special pages.

Thanks Aaron, didn't notice that! Is there some way to set advertising as the default?

One could do it via site JS (fire the link onload).
