NSLocalizedString seems like it'll work, though the way localized files are laid out in Mac/iOS app bundles may not be very TranslateWiki-friendly.

Labels in the UI should probably be given outlets so they can be replaced at runtime, rather than copying .xibs around.

There's some prelim work on this in sohan's patches, I'll clean up & merge in a bit.

Localization using jquery.i18n-style JSON backing files is committed. Still need to get into translatewiki...
