As you can see in an example like https://en.wikipedia.org/w/index.php?title=Asiana_Airlines_Flight_214&oldid=563198647, use of a list-defined reference within a template, like an infobox, produces an erroneous error message: "Cite error: A list-defined reference is not used in the content (see the help page)."

The error message could be clearer. But it looks like the issue is that engines is not an actual parameter for that infobox.  Thus, it never makes it to the expanded wikitext.

The error message is correct. The reference is defined in the list, but never invoked because it is included in an invalid infobox parameter.
