I think sysops should be able to tick a feature off the Beta list, if they find it hindering a project work; so no contributors can enable it in there.

Any existing examples for "hindering a project work"?

This will be possible whenever bug 26992 is resolved. For the time being, if a community wants to disable a beta feature, they can file a shell request asking for it to be added to $wgHiddenPrefs.
