As on every other Wikimedia wiki, accessing it redirects to the mobile page when doing so from a smartphone. But when I try to access https://beta.wikiversity.org/ I get redirected to https://beta.m.wikiversity.org/ and a "server not found" error. I found no other way to access this wiki from mobile.

Adding ?mobileaction=toggle_view_desktop to the URL seems to be a way to get around this bug, though obviously that's no satisfying solution.

Not MF, it's a DNS issue.

Can't you just add a line like this to wikiversity.org:
beta.m                 1H      IN CNAME        mobile-lb.eqiad.wikimedia.org.
?
