In Id197389e1cc7763e80ba82deb6a66db0f0810c89, the following was added:

Why is enwiki the only Wikipedia to send from @wikipedia.org? Is it safe for us to set 'wikipedia' => '...@wikipedia.org'?

We should figure out what is needed to get other projects to send emails from their respective domains.

And the default should probably be @wikimedia.org. I think I remember a bug or discussion somewhere about that...
