Clicking the down arrow on a category name allows deleting it and changing its sort name. It would also be useful to be able to edit the category name. It is easy to do it in the source editor by simply editing the [[Category:]] link. In VE currently you can only delete the category and re-add it, which is less convenient.
Just noticed that the User guide[1] says: "On the Page options menu there are options [...] to add, edit, or delete categories." I'd say that actual "editing" must involve the resolution of this bug, and otherwise it is just adding and deleting. [1] https://www.mediawiki.org/wiki/Help:VisualEditor/User_guide
