It is easy to assign a bug the myself but accidentally leave it as New, in which case it won't show up in the right queries etc. The status change should be automatic when someone sets an assignee. Not sure if this is an upstream bug or related to some local JS hack.

Upstream.
Assignee is meant to work on a ticket. At some point / some time.
ASSIGNED status means traditionally "The assignee is working on this NOW or really really soon."

If we either had a more fine-grained workflow (that can be defined on a component level in Bugzilla) or if we all had a default "Nobody" assignee for all tickets in this Bugzilla, this could work, but we don't. 

For the records, https://bugzilla.mozilla.org/show_bug.cgi?id=1036834 is the upstream request the other way round: ""Reset Assignee to default" should also change the bug status from "ASSIGNED" to "NEW""
