In this example page https://it.m.wikivoyage.org/wiki/Italia#/languages all the links to the other language version bring to the desktop version instead of the mobile one.

I'm not sure this is a bug. 

How did you get / go to  https://it.m.wikivoyage.org/wiki/Italia (on which kind of device, and did you explicitly enter that mobile URL with the .m. in there?)

The links themselves do not go to .m., but if you ended up on the mobile page (because your browser's useragent string said that it's a mobile device), clicking the "other languages" links will redirect me again to the .m. version simple because my mobile phone identifies me as a mobile device.

I've accessed to that URL from Chrome on my PC on "mobile version mode".
I've consider it a bug, because when from my phone I click on "desktop version mode" all the languages link brings me to the desktop version (even if I'm browsing with my mobile), so I was expecting the same approach on the first case.

I mean, if I enter in a specific mode, I'm expecting to remain in that mode unless I explicitely decide to change it.

I'll continue the discussion of ths bug on bug 65047.

PS it should be opened a bug on bugzilla mail, beacuse via email I've correctly received this message:

And both are clearly wrong.

For me, the last duplicate mail i become was correct. But feel free to open a new bug and add a copy of the E-Mail you recieved as an attachement:

Different problem, hence different report please with full mail attachment. 
Though I cannot reproduce.
