Do the ground work to identify - with product's help - tables/schemas, what they are used for and what sort of data they want to keep beyond 90 days (stripped of PII).

- Aaron can help reviews schemas, he could show which tables contain sensitive data
- Talk to individual teams to identify what they need

schema of talk pages has been updated to include a purge schedule.  ( https://trello.com/c/ioW5LdYl/523-el-schema-data-audit )
